Super simple homemade burger seasoning.

Ingredients


  • Paprika

  • Cayenne

  • Onion Powder

  • Garlic Powder

  • Sea Salt

  • Black Pepper





Instructions


  1. Add ½ teaspoon garlic powder

  2. and ½ teaspoon onion powder

  3. and ½ teaspoon cayenne pepper (use ¼ teaspoon if you don’t want as much kick)

  4. and 2 teaspoon paprika

  5. and black pepper and sea salt to taste.

  6. I do about 4-5 twists of each.

  7. Stir together and that is it! Easy peasy.

Vitamin C Sunrise Smoothie

I had never actually thought about putting frozen cranberries into a smoothie before – for some reason I never saw them as an acceptable smoothie berry. But I love tart fruits, and figured they would pair well with the oranges – and I was right! Lesson learned – all fruits have smoothie potential!

Start your day with a 1-2-3 Vitamin C punch! Cranberries, oranges, and strawberries combine with milk and vanilla whey powder to create a healthy grab and go meal that is reminiscent of those creamy, frothy beverages you might find at your local Orange Julius. Indulgent taste, and packed with nutrition – what’s not to like?

Ingredients:

  • 1 large navel orange, peeled

  • 1/2 c frozen cranberries

  • 1/2 c frozen strawberries

  • 1 c milk (dairy or non)

  • 1 scoop North Coast Naturals Vanilla Iso-Protein Whey Powder


Instructions:

1. Place all ingredients in your blending machine of choice. Whiz away until smooth. Drink and enjoy!

 

Oven baked parmesan seasoned fries... to die for.

Ingredients:

1 pound of medium russet potatoes (approx 3 medium potatoes)
1 1/2 TBSP of Extra Virgin Olive Oil
1/4 tsp Dried Thyme
1/4 tsp Dried Oregano
1/8 tsp Dried Rosemary
1/4 tsp of Garlic Powder
1/4 tsp of Old Bay Seasoning
2 TBSP of Kraft Parmesan Style Grated Cheese (I used reduced fat)

Directions:

*Preheat oven to 425.
*Wash and cut potatoes into 1/8ths.
*Place on a cookie sheet that has been lined with foil (I used Reynolds Release foil so that they will not stick, but you could also either use non-stick cooking spray or lightly grease the top of the foil with extra virgin olive oil).
*Mix all of the spices and the parmesan cheese in a small bowl.
*Place all of the potatoes (remember we are talking about one pound at a time) into a gallon size freezer bag, add olive oil and the parmesan cheese/spice mixture to the bag.
*Seal the bag and shake until the potatoes are evenly coated.
*Once thoroughly coated dump onto the prepared cookie sheet and spread in a single layer.
* Bake 30-45 minutes or until tender and lightly golden brown. (Baking times will vary depending on the amount of fries that you make and the size that you cut them). For the ones shown in the picture they were baked at 425 for 45 minutes.

THAI BASIL COCONUT LENTILS

INGREDIENTS


  • 1 cup dried lentils or monggo beans

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • ½ head green cabbage, shredded

  • ½ large kabocha squash (about 3-4 cups cubed)

  • 1 can coconut milk

  • 1½ tablespoons tom kha paste

  • cayenne pepper, chili powder and salt

  • fresh basil and chopped peanuts for topping





INSTRUCTIONS


  1. Cook the lentils in a pot of boiling water for about 45 minutes or until soft. Drain the water and set aside.

  2. While lentils are cooking, saute the garlic in the olive oil over medium high heat. Add the cabbage, season with salt, and stir fry until the cabbage begins to soften. Remove from heat and set aside.

  3. Add a little more oil to the pan and add the squash. Season with chili powder, cayenne, and salt – or any seasonings you like. Add the coconut milk and simmer the squash for 8-10 minutes or until soft but not mushy. Add the tom kha paste and stir until mixed in with the coconut milk.

  4. Add the cooked cabbage and lentils to the squash and gently stir to combine. Top each bowl with fresh basil and chopped peanuts.





NOTES

Tom Kha paste is a Thai seasoning that has a lemongrass, garlic, hot pepper, and ginger-y flavor. The flavors are really phenomenal. I bought it at the big grocery store here in Cebu and found it with the curry paste and other spices and pastes. If your grocery store doesn’t carry it, check at an Asian market.


CHOCOLATE PEPPERMINT RICE KRISPIE TREATS

INGREDIENTS:
3 tablespoons butter or margarine
1 package (about 40) regular marshmallows or 4 cups mini marshmallows
6 cups Rice Krispies cereal
3 cups chocolate chips
2 cups crushed candy canes or peppermint candies

DIRECTIONS:
In a microwave safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Mix until smooth.

Add Rice Krispies cereal to the bowl and stir until the cereal is well coated.

Using a buttered spoon, press mixture into 13 x 9 x 2-inch pan coated with cooking spray and allow to cool.

Melt chocolate chips in a microwave safe bowl on high for 30 seconds and stir. Repeat the 30 second intervals until melted.

Cut the rice krispie treats into 2-inch squares and place the squares on parchment paper.

Get a spoonful of the melted chocolate chips and drizzle chocolate all over the rice krispie treats. If desired, spoon the melted chocolate into a ziplock bag with a tiny portion of the corner snipped off and squeeze the chocolate out of the bag onto the treats.

Sprinkle the squares with crushed peppermint candies before the chocolate sets.

Enjoy!

Spinach and Mushroom Smothered Chicken

Ingredients



  • 3 cups fresh baby spinach

  • 1-3/4 cups sliced fresh mushrooms

  • 3 green onions, sliced

  • 2 tablespoons chopped pecans

  • 1-1/2 teaspoons olive oil

  • 4 boneless skinless chicken breast halves (4 ounces each)

  • 1/2 teaspoon rotisserie chicken seasoning

  • 2 slices reduced-fat provolone cheese, halved


Directions



  1. In a large skillet, saute the spinach, mushrooms, onions and pecans in oil until mushrooms are tender. Set aside and keep warm.

  2. Sprinkle chicken with seasoning. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.

  3. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a meat thermometer reads 170°.

  4. Top with cheese. Cover and grill 2-3 minutes longer or until cheese is melted. To serve, top each chicken breast with reserved spinach mixture. Yield: 4 servings.

1 chicken breast half equals 203 calories, 9 g fat (2 g saturated fat), 68 mg cholesterol, 210 mg sodium, 3 g carbohydrate, 2 g fiber, 27 g protein. Diabetic Exchanges: 3 lean meat, 1 vegetable, 1 fat.

Biscuits and Gravy Casserole

INGREDIENTS


1 can large, flaky biscuits (such as Grands)


1/2 pound ground breakfast sausage


3 Tablespoons flour


1/2 teaspoon salt


1/2 teaspoon black pepper


2 and 1/2 cups milk


INSTRUCTIONS




  1. Preheat oven to 400 degrees (F).

  2. Prepare a small casserole dish (approximately 7x10) with cooking spray. Set aside.

  3. Open biscuits, and cut biscuits into quarters.

  4. Layer half of the quarters in prepared pan.

  5. Bake for 10 minutes.

  6. Meanwhile, prepare gravy.

  7. In a heavy skillet, brown the ground breakfast sausage over medium high heat until fully cooked.

  8. Sprinkle the cooked sausage with 3 Tablespoons of flour.

  9. Use a wooden spoon to stir flour into sausage until completely absorbed.

  10. Lower heat to medium, and cook flour/sausage mixture for 3-5 minutes, stirring frequently.

  11. Add milk, and stir to combine.

  12. Add salt and black pepper.

  13. Stir frequently until mixture comes to a slight boil.

  14. Taste, and adjust seasonings as desired. (I usually add more black pepper)

  15. If the gravy is too thick, add a bit more milk. You want the gravy to be thickened but not too thick, not "globby," it should still be slightly runny.

  16. Pour gravy over the cooked biscuits.

  17. Layer the remaining uncooked, quartered biscuits over the gravy.

  18. Place casserole dish on a baking sheet, and bake for 25 minutes or until golden brown.

  19. Serve immediately.

  20. Enjoy!




Bacon, Sausage & Cheddar Quiche

Ingredients


  • 1 uncooked pie crust for a 9 inch pie

  • 8 slices of bacon

  • 2 tbsp butter

  • 1 large onion, sliced

  • ½ c sausage crumbles, cooked

  • 8 eggs

  • ½ c heavy cream

  • 1 c milk

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp mustard powder

  • 2 c sharp cheddar cheese





Instructions


  1. preheat oven to 400 degrees

  2. cook the bacon until just before crispy

  3. while bacon is cooking melt butter in a large saucepan and add the onion

  4. allow to cook until a dark golden brown, stirring occasionally

  5. remove from heat and allow to cool

  6. whisk eggs, cream, and milk together until fluffy

  7. add in salt, pepper and mustard powder

  8. stir in the bacon, sausage, onion and cheese

  9. press the crust into a tart pan or a deep dish pie pan

  10. pour the egg mixture into the pie crust and place onto a baking dish

  11. loosely cover with foil and place in the oven

  12. bake for 40 min

  13. remove the foil and bake for another 10 to 15 min until crust is golden

  14. remove and allow to cool for 5 to 10 min

  15. slice and enjoy!



Chocolate Layered Magic Cookie Bars

Ingredients



  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup unsweetened cocoa

  • 1/4 cup sugar

  • 1/2 cup butter, melted

  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk

  • 1 cup (6 oz. pkg.) semi-sweet chocolate chips

  • 1 cup (6 oz.) butterscotch or peanut butter-flavored chips

  • 1 1/3 cups flaked coconut

  • 1 can chopped nuts



Instructions



  • HEAT oven to 350°F (325°F for glass dish). Combine graham cracker crumbs, cocoa, sugar and butter in small bowl. Press crumb mixture firmly into bottom of ungreased 13 x 9-inch baking pan.

  • POUR sweetened condensed milk evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.

  • BAKE 25 to 30 minutes or until lightly browned. Cool. Chill if desired. Cut into bars.

Zesty Lime Shrimp and Avocado Salad

  Shrimp is low in fat and calories, but tends to be naturally high in sodium so if you are on a restricted sodium diet, you may want to limit your shrimp intake. Moving forward, I will be posting the sodium info on new recipes without the salt as most foods contain sodium. If you use salt be sure to adjust the nutritional info.

  • 1 lb jumbo cooked shrimp, peeled and deveined, chopped*

  • 1 medium tomato, diced

  • 1 hass avocado, diced

  • 2 limes, juice of

  • 1 tsp olive oil

  • 1 tbsp chopped cilantro

  • salt and fresh pepper to taste


Instructions:
In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.

Makes 3 1/2 cups.
